Ukrainian Borshch (Vegetarian)

 What you’ll be needing:

  • Kidney beans (canned) – 100 grams.
  • Potatoes – 3 pieces.
  • 2 big tomatoes or 1.5 tbsp of tomato paste.
  • Lemon juice 2 tbsp or 1 tbsp of balsamic vinegar.
  • Red beet – 1 medium size.
  • Carrot – 1 piece.
  • Garlic – 3 pieces.
  • Cabbage – 1/4 piece.
  • Pepper – as per taste.
  • Onion  – 1 piece.
  • Salt – as per taste.
  • Vegetable Oil – 1-2 tbsp.
  • Sour Cream – as per taste.
  • Greens – as per taste.

 

What is the nutritional value (per serving):

  • Calories – 100 kcal.
  • Proteins – 15.8 gram.
  • Fats – 10.6 gram.
  • Carbohydrates – 30 gram.

 

How we will be cooking this:

  • First of all wash and peel the potatoes, red beet and carrot. Potatoes are then cut into cubes and then start boiling them in a medium size pot with 2 litres of water.
  • Grate the peeled red beet and carrot. If you are using tomatoes then you can grate them as well.
  • Wash and shred the cabbage. Chop the garlic and onion nicely.
  • Take a deep frying pan and heat it on a medium fire with oil. When frying pan is hot enough, start frying the garlic and onion until golden and then add the carrot and red beet. Mix everything nicely and then add lemon juice or balsamic vinegar and keep frying on a low fire for about 3 minutes. In the end, add prepared the tomatoes or tomato paste. If you are using tomato paste then you have to dissolve it in a little bit of water before adding. Season this with salt and pepper mix nicely and pour into the pan with boiling potatoes.
  • In the end, put shredded cabbage and canned beans and boil for 5 minutes until cabbage is soft.
  • Serve with sour cream, chopped greens and bread. Let me know in comments about your experience.
